The sweetness in licorice comes from glycyrrhizin, which is thirty to fifty times sweeter than sugar; however, its flavour is less immediate and lasts longer. Licorice has been used extensively in Herbal Medicine for a variety of conditions and ailments. It is an adaptogen, has a sweet taste and cooling action. In Ayurveda licorice is used as calming for vata, cooling for pitta, and can liquefy the mucus of kapha. Added to herbal tea, it gives a naturally sweet taste.
